Job Description:
• Introduce and prepare traditional and authentic Afghan dishes including Kabobs
• Lead and supervise a team of approximately 6-12 employees
• Ensure that all food service standards and quality requirements are met
• Menu planning, new menu making, ordering and inventory
• All aspects of catering management
• Hands on food preparation and serving when needed
• Perform menu engineering to increase profit
• Review existing menu items and perform needed changes to increase taste
• Train and development of employees for inventing new menus
• Ensure all equipment is in good shape and all safety procedures are followed.
• Responsible for monitoring employees and reporting job related or health related issues to upper management.
• Responsible to keep the restaurant cleanliness and organization of all work area beginning, during and the end of each service.
• Ensuring all company policies, legal requirements and Health & Safety standards are met.
• Plan menus and ensure food meets quality standards
• Consult with clients regarding specialty functions
• Help improve recipes, cooking techniques and introduce new menu items across all of the restaurants locations.
Qualifications:
• Minimum 3-5 years of experience as a Cook/Chef, specializing in traditional Afghan dishes including Kabobs
• 2 years of supervisory experience is required
• Experience as a Chef in an Afghan restaurant is required
• The ideal candidate will be organized, reliable, and have a positive attitude and a friendly personality.
• Must be able to speak English and have good communication skills
• In depth knowledge of traditional Afghan cooking methods
• Experience in menu costing, menu planning and food preparation
• Health and safety certification an asset
• In depth knowledge of authentic Afghan dishes, ingredients and spices

Job Description: The Head Sous Chef will play a key role in supporting the Chef de Cuisine and Executive Chef in defining Akira Back’s vision for high quality food and ensuring that it is delivered, with a hands-on approach where required, in a professional, safe and efficient manner, satisfying the needs of the individual restaurants and exceeding guest expectations. The position is responsible to oversee the entire kitchen operation including the alternative restaurants and the crew kitchen by initially monitoring all food preparation, presentation and delivery over the course of the day, and ultimately carrying the mandates and program as dictated by the Head Chef. This position is fast-paced and requires flexibility to adapt to last minute business needs.

Key Responsibilities:
• Ensures the efficient operation of food production areas in the kitchen, constantly analyzing quality of food production and preparation in accordance to company recipes
• Produces and maintains the highest food quality and control for all food products served in all areas
• Assures on-going training and that the high standards set by the Executive Chef/Head Chef are followed and assist them where necessary
• Work closely with the General Manager in order to execute a smoothly functioning restaurant, in a strive to consistently optimize guest experience
• Will oversee the requisitioning process to ensure proper usage of ingredients
• Supervise activities of cooks and other kitchen workers
• Demonstrate new cooking techniques and new equipment to cooking staff

Operations

Housekeeping

• Understand and abide by the Health & Safety standards
• Ensure that the kitchen cleaning schedule set up by the Executive Chef is followed by everyone after each service and exercising proper methods to prevent equipment damages

Human Resources
